Do I have to choose one network for my whole store?

No. A halfin invoice carries one fiat-anchored amount and can present more than one supported rail; the customer settles in whichever USDC network they already hold. Offer both and a mainnet payer pays on Ethereum while a Base payer pays on Base, and your books see the same dollar figure either way. Pin to a single rail only when your payout or conversion flow has a concrete reason to expect one network.
