Do I mark the order paid when the customer returns to my page?

No. The redirect to your redirect_url is for the customer's experience and can be missed if they close the tab after paying. Mark the order paid from the signed invoice.paid webhook your server receives independently — verify the HMAC over the raw bytes with a constant-time compare first, then act. Driving order state from the redirect alone lets anyone mark an order paid by visiting your thank-you URL.
