What should I keep for accounting?

Keep three things: your invoice records, your payout records, and the webhook events that report what happened to each. The webhook is the authoritative log — it is the source of truth, not the redirect the customer's browser makes back to your site after paying. Treat the stream of webhook events as the spine of your bookkeeping, with invoices and payouts as the objects those events describe, and your accounting reflects what actually settled on-chain rather than what a browser happened to report.
